Quiche - Mireille Boutry, MD
This is my salmon quiche recipe:
Ingredients:
1 frozen ready-made pie crust(deep dish)
3 whole eggs, 1 cup cream (milk if you are on a diet)
1 1/2 cup swiss cheese (or any other grated cheese you like)
1 tsp pepper (may use cayenne)
1 cup smoke salmon trimmings
You may add coriander or other spices if you like.
Making the quiche:
Heat oven to 425.
Put the frozen crust (with its metal foil dish) in a pyrex dish.
Put the salmon in a layer at the bottom of the frozen crust.
Mix the eggs, milk, cheese and spices together and pour over the salmon.
Place in middle of oven for 25 min. or till golden brown on top.
Let cool before cutting.
Enjoy!
Variations:
You may put an additional layer of fried onions on top of the salmon.
Instead on salmon at the bottom, you may use a layer of cooked, squeezed spinach covered with a layer of dijon mustard +/- fried onions, or cooked mushrooms +/- fried onions, or cooked bacon bits, or any little pieces or cooked vegetables well drained like zucchinis.
If you skip the salmon, cheese and spices, add a little cornstarch +/- cinnamon, and use pieces of cooked/ canned pears, cherries, apples or apricots, it makes a nice desert pie.
