Kahlua Chocolate Chip Cheesecake - Lars Peterson, '06
Crust:
1-1/4 C graham cracker crumbs
1/3 C sugar
1/3 C butter or margarine, melted
cocoa to taste
Combine above ingredients and press into the bottom of a springform pan.
3 pkgs. (8 oz) cream cheese
1/4 C sugar
1 can (14 oz) sweetened condensed milk
4 eggs
2 tsp vanilla extract
Kahlua
chocolate chips
Beat cream cheese and sugar until fluffy. Gradually beat in sweetened condensed milk. Add eggs, one at a time, and beat well. Add vanilla. Separate about 1/3 of mixture into separate bowl and add Kahlua to taste and mix. Mix in chocolate chips to both mixtures. Layer both cream cheese layers in the pan. Bake at 300 degrees for 60 - 70 minutes or until center is almost set. With knife, loosen cake from side of pan. Cool. Remove sides from pan. Chill 8 hours (if you can stand it) and serve.
